Method
-
For the base, sieve the flour, baking powder,
35
SugaRite sachets (1g each) and cocoa powder together.
-
Beat the eggs till it becomes light and frothy.
-
Fold in the flour mixture.

Pour the mixture into a cake tin greased with butter.
-
Bake it at 170 º C for 15 minutes.

Cut the sponge into 3 layers on cooling.

Moisten the sponge with a
SugaRite syrup made
from 250 ml water and
20
SugaRite sachets (1g each).

On the 1st layer, drizzle
SugaRite syrup, spread the cream
and lay some chopped cherries.
-
Put the second layer on it applying pressure from the top.
Repeat the earlier step for the second layer.

Give a coating of cream on the 3rd layer.
-
Using a star nozzle, pipe out a designed icing on the cake
to make it look attractive. Also make a design along the
sides.

Garnish with sugarless chocolate flakes and chips.
